Summer Savory is also wonderful alone to season beans, meats and dressings. Culinary Properties:Summer savory is the kind of herb that’s compatible with a wide array dishes, just the way thyme in. In fact, the two can be easily used interchangeably. It’s one of the main ingredients in the herb blend, herbs de Provence, and is commonly paired with beans, vegetables, pork, lamb, stuffing, and sauces. Medicinal Properties:People take summer savory for coughs, sore throat, and intestinal disorders including cramps, indigestion, gas, diarrhea, nausea, and loss of appetite. People with diabetes take it to relieve frequent thirst. It is also used as a tonic and as an aphrodisiac to increase sex drive. It was also one of the earliest herbs brought from England by the original American colonists. Use Summer Savory to add intriguing taste to dressings and sauces, or do as the Romans, and use this interesting herb to flavor vinegar. Before Planting: Sow the hyssop seeds indoors eight to 10 weeks before the last frost of the season. Planting: Transplant the seedlings into the garden after the last frost and space the plants about 6 to 12 inches apart. Watering: Provide 1 inch of water once or twice weekly. Fertilizer: Prior to transplanting the seedlings to the garden, amend the soil with compost or organic material like aged animal manure. Days to Maturity: Hyssop will reach its maturity in 75 to 85 days from planting. Harvesting: Cut in the morning once the dew has dried. Then, hang upside down in a dark and well-ventilated area.
