This tender perennial is typically grown as an annual and is a very productive yielder. The bulb, stalks, and feathery leaves are all edible and very aromatic. Unique aromas and flavors to describe this plant consist of apple, licorice, anise and celery. The feathery foliage of Fennel is used to flavor salads, fish, soups, and sauces or dried and used for tea. The thick & juicy bulbous base can also be cooked as a vegetable, roasted, grilled or served raw. The stalks may be used as a celery substitute or used to make broths. The seeds can be crushed and incorporated into sausage or other meats for a warm, sweet anise flavor. Fennel is indigenous to the shores of the Mediterranean but has become widely naturalized in many parts of the world, especially on dry soils near the sea-coast and on riverbanks. Fennel Florence has a rich history in ancient Greece, where it was called "marathon." The Battle of Marathon in 490 BC and the Italian town of the same name both received their names from this plant, which the Grecians regarded as a symbol of victory. The seed of the fennel plant is most commonly found in Middle Eastern cuisine, while the bulb-like portion of the plant is popular in Italian and German cuisine.
