Chicory is a perennial herb (zones 3-7) which grows up to 36 inches tall. It likes full sun. The leaves are edible, a bit bitter like the dandelion, and used in salads. It develops pretty blue flowers. The roots may be dug and dried, and then ground and used as a coffee substitute. Sow the seeds in the spring or fall and barely cover them with soil and keep moist. Mature plants will tolerate dry, rocky areas. Space plants about 1 foot apart. 40 seeds per pkg.
